I missed french toast until I worked out this recipe. It took quite a few tries to get it exactly how I want it but I'm happy with it now. It works best with new bananas. Older bananas don't cook up quite as nicely though the recipe still works. I'm calling this a kid friendly recipe because my little dude likes it a lot.
This recipe makes enough batter for 4-5 pieces of toast. I only make 3 at a time because they are filling. There is no way I could eat 4 or 5 in one sitting.


What You Need:
Banana
1/2 cup soy milk
1 tbsp ground flax seed
2 tbsp flour
1 tsp baking powder
1 tsp lemon juice
4-5 slices of bread
1 tbsp oil
What To Do:
Blend first 5 ingredients together until smooth. Add the lemon juice and blend that in too.
Pour the batter into a shallow bowl or dish and dip the bread in the batter. Coat both sides of the bread and let soak for a few minutes.
Heat oil on a non-stick pan. Spread the oil out with a spatula then add the french toast to the pan. Cook until browned then flip to brown the other side.
Enjoy with maple syrup :)
