This is one of my go-to recipes for potlucks because it can be whipped up quickly and doesn't contain any common allergens. If you need a gluten free option it can be served with gluten free crackers instead of a baguette. It's a little different with the balsamic vinegar but you could use lemon juice or another vinegar instead if you don't have balsamic.
What You Need:
2-4 cloves of garlic in its paper
4 ripe tomatoes, diced
1 tbsp balsamic vinegar
1 tsp dried basil (or 1 tbsp of fresh, minced basil)
1 tsp dried oregano
1/2 tsp salt
What To Do:
Put garlic cloves on an oven safe dish and pop them in the oven at 350 degrees for 5-8 minutes. The paper around the garlic will turn a bit brown. Remove from oven and let cool. When cool, mince the garlic.
Place all ingredients in a bowl and mix together.
Done. That was easy.
Serve with a sliced baguette or crackers. To get extra fancy, toast the baguette slices by laying them flat on a cookie sheet and broil until lightly browned. You will have to watch them carefully so they don't burn.
